We use several of those items in this jerk marinade, but not all of them. The marinade comes in a variety of flavors.

With molasses as the sweetener, we find this one to be well-balanced and addictive. And, yes, the amounts of all the spices are correct. This is a richly spiced dish.

Is Jerk Chicken Hot and Spicy?

Jerk has a bit of a kick to it. We traditionally used Scotch bonnet peppers in this meal (often called Caribbean red peppers).

In the United States, they are nearly tough to get by.

However, Scotch bonnets have a heat rating of 100,000–350,000 Scoville heat units, which is comparable to habanero peppers, making them a close substitute.

  11. 8 pieces of bone-in chicken drumsticks and thighs

  1. Green onions, garlic, jalapeo, lime juice, oil, brown sugar, allspice, thyme, cinnamon, 1 teaspoon salt, and 2 tablespoons water are blended together in a blender until smooth. . Place 14 cups of water in a separate bowl.
  2. Season the chicken with salt and pepper in a shallow dish.
  3. Pour the rest of the marinade over the chicken and toss to coat.
    Allow marinating in the fridge for at least 2 hours or up to overnight, turning once or twice.
  4.  Heat the grill to medium-high and grease the grates when ready to grill. Grill chicken for about 10 minutes, flipping occasionally until browned in areas.

  4. A tablespoon of fresh lime juice

Instructions

  1. In a blender or food processor, combine all the jerk spices, habanero, soy sauce, pineapple juice, lime juice, liquid smoke, and ginger.
  2. Blend until the ingredients are thoroughly blended. I usually combine the ingredients in a bowl with a hand immersion blender.

  1. Drizzle the chicken with the marinade and jerk seasoning. You can marinate the chicken in the fridge; it’s not required, but it provides the greatest results. (30 minutes to 24 hours)
